About the role
A Commis to join the Kitchen team at Noku Maldives by Vignette Collection, maintaining culinary standards and supporting kitchen operations.

What you would do
- Prepare and cook dishes following standardized recipes and cooking techniques.
- Follow the specification book and report any unavailable ingredients to senior chefs for alternatives.
- Maintain cleanliness and organization of kitchen equipment, utensils, and work areas in line with HACCP standards.
- Assist in inspecting coolers and freezers to ensure proper storage procedures are followed.
- Support daily operations by communicating with the Demi Chef de Partie and covering duties in their absence.
- Participate in daily briefings to review menus, requirements, and procedural updates.
- Ensure proper sanitation practices are followed by all cooks and report any issues to supervisors.
- Provide full handovers between AM and PM shifts to maintain smooth kitchen operations.
- Adhere to all health and safety protocols and assist in ensuring compliance across the team.
- Attend and participate in daily briefing meetings to discuss the daily menus, requirements, and any changes in procedures.
What they are looking for
- 2–3 years of experience in Kitchen Chef or a related field.
- Ability to work in a fast-paced environment and handle multiple tasks simultaneously.
- Ability to work flexible hours, including nights, weekends, and holidays.
- Physical ability to stand, walk, and lift.
- Experience in the Maldives resort industry is preferred but not required.
