Maldives resort kitchens hire at every level, from commis to executive chef, and food and beverage is the largest area of resort work. In 2022 it accounted for 33% of resort jobs, and 67% of those jobs were held by foreign workers (Maldives Bureau of Statistics).

What a resort chef does
A resort chef cooks for guests on an island where every ingredient arrives by boat. One resort can run several outlets: a main buffet restaurant, à la carte restaurants, in-villa dining and bars.
That means ordering ahead, careful storage and menus that work with what the supply boat brings. Chefs live on the island with the rest of the team.
The kitchen ladder
Resort kitchens use the brigade titles you see in hotel kitchens worldwide. These are the titles in Maldives chef listings, from entry level up:

- Demi chef de partie
- Chef de partie

- Executive sous chef

Alongside the ladder, a chef de cuisine runs one restaurant or cuisine. Some groups have a director of culinary above the executive chef. Specialist roles, such as a Thai chef or pastry chef, follow the same levels.
Food safety: the certificates and knowledge kitchens ask for
Food safety is the qualification senior kitchen listings ask about. Senior chef listings in the Maldives ask for up-to-date knowledge of food safety rules and HACCP. One executive sous chef listing we read asked for experience running HACCP audits.
HACCP stands for Hazard Analysis and Critical Control Point. It is the food safety system in the Codex General Principles of Food Hygiene (CXC 1-1969). FAO and WHO publish the code, last revised in 2022.
HACCP rests on seven principles, starting with a hazard analysis and the critical control points where hazards are controlled.
The same code says everyone who handles food should be trained in food hygiene to a level that fits their job. If you hold a food hygiene or HACCP certificate, bring it to interview.
In the Maldives, food businesses are regulated under the Food Safety Act (Law 6/2024), ratified on 23 May 2024 (President's Office). The Act sets hygiene standards for the people who handle food. Food establishments register with the Maldives Food and Drug Authority, and registration lasts a year.

Languages that help
Kitchen listings are written in English, and most resort food and beverage staff are foreign, so English is how a mixed team works together. Guest-facing roles, such as live cooking stations, benefit from the languages of the main markets.
China (14.7%), Russia (12.4%), the UK (9.0%), Germany (7.5%) and Italy (6.8%) sent the most tourists in 2025 (Ministry of Tourism). India came sixth, at 5.9%.

Pay
Resorts rarely advertise pay, so most chef listings say nothing about salary. The table shows advertised pay where enough listings state it.

Service charge comes on top of salary. Tourism businesses must charge at least 10% service charge and share it equally among all employees (Employment Act, section 52). The employer may keep no more than 1%.
The service charge is paid monthly, for the previous month.
Coming from abroad
If you are not Maldivian, the resort applies and pays for your work permit (Regulation 2025/R-120, Article 77). It must also arrange your accommodation (Article 60). Chefs are not on the list of jobs being reserved for Maldivians.
